‘Tis the Season to bake Metabolism Miracle SNICKERDOODLES! Neutral, very low carb, gluten free, and DELISH!


The holiday season brings with it visions of sugarplums, traditions, sites, smells….and COOKIES! Cookies are usually high in carbohydrate grams ( from the sugar and flour) and gluten (wheat flour).

Don’t worry about carbs or gluten with these Snickerdoodles! By replacing wheat and sugar with almond flour and the sugar substitutes Truvia or Splenda, these cookies are gluten- free and less than 2 grams carbohydrate per cookie.

Better still, for those following The Metabolism Miracle or The Diabetes Miracle, these cookies are NEUTRAL!!!! Keep to a maximum of 3 cookies/day and enjoy!


1/2 c softened butter

1 1/2 c almond flour

1 c Splenda or Truvia

1 Large Egg

1 tsp Vanilla

1/4 tsp Baking Soda

1/4 tsp Cream of tartar

4 tbsp Splenda or Truvia

2 tsp Ground Cinnamon


Preheat oven to 350 F

In a medium mixing bowl, beat butter for 1 minute until fluffy

Add half the almond flour, half the sweetener, large egg, vanilla, baking soda, and cream of tartar and beat until well blended.

Beat in remaining almond flour and sweetener and mix well

Cover mixing bowl, place in the refrigerator, and chill for at least two hours (even overnight; just make sure it is well covered.

On a saucer, mix 4 tablespoons of sweetener and 2 tsp ground cinnamon and set aside

Shape chilled dough into walnut sized balls and roll in Splenda/Truvia and cinnamon mixture until all sides are coated.

Place coated cookie balls on a cookie sheet about 2 inches apart

Using the bottom of a drinking glass, slightly flatten the cookie ball.

Bake for 12-14 minutes until bottoms are golden in color

These cookies store best in the freezer.

Servings: 18 cookies
