Low Carb Holiday Egg Nog

Feel free to play around with this eggnog recipe to match your taste and texture preference. It’s neutral on The Metabolism Miracle and The Diabetes Miracle…but …..considering the half and half and heavy cream, it is high in fat and calories. So, for a serving of Low Carb Eggnog, make sure to add some extra minutes to your daily exercise routine!
For those who enjoy “Spiked” eggnog…try adding a combination of Cognac and Rum. Use 1 part of liquor to 5 parts eggnog. About 1 shot of cognac/rum combined to 5 ounces of egg nog. Still neutral on Metabolism Miracle!
Low Carb Eggnog (6 ounce single serving)
– 2 Tbls heavy cream (whip for a fluffier egg nog)
– 1/4 cup Egg Beaters (or other double pasteurized liquid egg substitute)
– 2 Tbls of Splenda or Stevia
– 1/2 cup half and half
– 1/2 tsp vanilla extract
– nutmeg to taste
Whip the heavy cream separately to make it fluffy and light. Place the other ingredients in a blender. Blend on high until Splenda dissolves. Right before serving, gently fold in the beaten heavy cream. Sprinkle with nutmeg.
*According to the Egg Beaters site, Egg Beaters are double pasteurized and safe to eat uncooked.
