Low Carb Macaroons…A Sugar free, Wheat Free, Gluten free cookie recipe

Coconut Macaroons are a coconut lover’s dream. For those counting carb grams, people with diabetes, Celiac disease, or dieters avoiding wheat and gluten, this easy recipe will become a holiday cookie tradition.  Only 1.5 grams net carb per cookie and considered NEUTRAL on The Metabolism Miracle or The Diabetes Miracle.

4 Egg whites from 4 large eggs, no liquid whites from the carton
1/4 tsp Salt
1 tsp Vanilla extract
1 c Granulated Splenda
1/2 c Ground almonds
2 c Unsweetened Coconut flakes

Preheat oven to 325 F

In a mixing bowl, whip egg whites, salt, and vanilla until frothy

Slowly add granulated Splenda (sucralose) and whip until stiff peaks form

Gently fold ground almonds and unsweetened flaked coconut into the whipped egg white mixture.

Line cookie sheets with parchment paper

Drop spoonfuls of macaroon batter onto lined cookie sheet about 1 inch apart as macaroons do not spread out in the baking process.

Bake in preheated oven for about 18-20 minutes.

Turn oven OFF. Without removing cookies from the oven, open the oven door slightly and let the cookies cool in the oven. This gentle drying process allows the macaroons to set properly.

When completely cooled, store in an airtight container.

Makes about 24 macaroons

By substituting unsweetened flaked coconut and ground almonds for flour and Splenda for sugar, this cookie recipe is great for those with diabetes, Celiac disease, gluten enteropathy, wheat allergy, along with those who choose to decrease carb intake or eliminate sugar.
