This Cranberry and Walnut Cookie Recipe is great for diabetes, gluten-free, and low carbers!
Looking for a cookie that is delicious, nutritious AND safe for those with diabetes ? These cranberry walnut cookies are low in carbohydrate (about 3 grams carbohydrate per cookie), high in protein (whey protein powder and eggs), high in healthy fat ( almond meal) and super- antioxidants (cranberries).
A low carb, gluten free, wheat free, no sugar added cookie recipe is perfect for those with diabetes and choose to lower their carbohydrate intake. The cranberries give these cookies a bite and the walnuts provide a perfect crunch. Two of these cookies are considered neutral on The Metabolism Miracle and The Diabetes Miracle program. For other low carbers, each cookie contains 3 grams net carb.
Preheat oven to 375 F
In a medium mixing bowl, cream butter and cream cheese until fluffy
Add sucralose, vanilla extract, cinnamon and beat again.
Add eggs, and beat until mixture is combined.
Add almond meal/flour, whey protein powder, baking powder, baking soda and salt and beat until all combined.
Stir in cranberries and chopped walnuts.
Drop by rounded spoonfuls onto an ungreased cookie sheet
Bake about 7 to 9 minutes, until top is just browning.
Cool completely before eating and store in a sealed container.
