Most people with type 2 diabetes find that bread products, even those made with whole grain flour, have a high impact on blood glucose. To keep blood sugar in a normal range, biscuits are reserved for an occasional treat or they are consumed and the high blood glucose penalty is paid.
Wouldn’t it be great to be able to have a biscuit with no blood sugar roller coaster? This recipe for cheddar cheese drop biscuits will become an all-time favorite.
If these biscuits were made with traditional enriched flour, each would contain 30 grams net carb. Made with whole wheat flour, each biscuit would contain 23 grams net carb. But…made with almond flour, each biscuit contains only 3 grams net carb. On The Metabolism Miracle and The Diabetes Miracle program, these biscuits are considered neutral!
Preheat oven to 350 F. Line a cookie sheet with parchment paper
In a large bowl, stir together the almond flour, shredded cheddar, salt, baking soda, garlic powder, onion powder, Old Bay seasoning, rosemary, parsley flakes. Cut in the butter using a fork or pastry blender until crumbly. Add the egss and mix to form a dough.
Using a fork or pastry blender, cut in the cold butter until mixture is crumbly in texture.
Add lightly beaten eggs and mix to form a dough. (Use plastic gloves if you are using hands to mix the dough)
With gloved hands, divide the dough into 8 portions and form into balls
Place on parchment lined baking tray and flatten slightly. )Insulated baking trays help prevent burning).
Bake at 350 F for 15-20 minutes or until an inserted toothpick comes out clean. If baking tray is not insulated, check frequently for timing.
While biscuits are baking, melt 3 Tablespoons unsalted butter (stove top or microwave)with parsley flakes and brush on the top of baked biscuits when you remove them from oven. Immediately sprinkle with parmesan cheese.
Recipe makes 8 biscuits with 3 grams net carb per biscuit. (Neutral on Metabolism Miracle or Diabetes Miracle).
Having an almond flour cheddar cheese biscuit with a Chicken Caesar (sans croutons), Chef’s, or Cobb Salad is a very low carb meal (neutral on Metabolism Miracle and Diabetes Miracle. Smuggle them into your favorite seafood chain restaurant and you can enjoy the cheddar biscuits without the carbs.
